The caveat is important: the safety of blue steak depends entirely on the quality of the sear, the quality and handling of the meat, and the cut being a whole, unprocessed muscle. Blade-tenderized steak, mechanically tenderized cuts, or any beef that's been injected or pierced changes the equation — those processes can move surface bacteria into the interior, and the whole-muscle safety logic no longer applies.
Steak Tartare: Why It's Not the Same as a Rare Burger
Steak tartare is raw beef, finely minced, served immediately after preparation. On the surface, it seems like it should carry the same risk as a rare burger — it's ground beef, after all. The difference is in how it's made and when. A good chef preparing tartare starts with a high-quality whole muscle cut, typically tenderloin, and trims the exterior before mincing — removing the surface layer where contamination would be. Some trim and briefly sear the exterior before cutting it. The meat is minced immediately before serving, not ground in advance and left sitting. The result is a dish that still carries some risk — no raw meat preparation is completely risk-free — but whose risk profile is significantly lower than a ground beef patty that was made hours earlier and has been sitting at temperature. Tartare is not safe in an absolute sense. It's a dish that reduces risk through careful sourcing, immediate preparation, and technique.
The Proteins Where Rare Is Never Safe
Chicken and turkey are in a completely different category. Unlike whole-muscle beef, where bacteria are primarily a surface concern, poultry carries Campylobacter and Salmonella throughout the muscle tissue — not just on the surface. Pork is a more complicated story. Historically, pork was always cooked well done because of the risk of Trichinella, a parasite that was once more prevalent in commercially raised pork.
